Ingredients:
2 onions sliced
2-3 bell peppers or sweet peppers sliced
1 tsp dried basil
1 tsp dried oregano
Salt and black pepper
Meatloaf ingredients:
1lb ground chicken
1lb ground pork
1Tbs grated garlic
2 tsp fennel seed
2 tsp seasoning salt (or to taste)
2 tsp oregano
2 tsp poultry seasoning
2 tsp paprika Sauce:
2eggs 2-3 Tbs Ketchup
red chili flakes to taste 1 Tbs sriracha
black pepper to taste
4-5 slices of bread mixed with 1/4 of milk and crumbled
Directions:

Tip: line baking sheet with foil for easy clean up.


In a pan saute the onions, peppers, salt, pepper, dried basil and oregano.
Serve meatloaf with peppers and onions. You can accompany it with mash potatoes or any of your favorite meatloaf sides. You can also make it into meatloaf sandwiches. Enjoy.

Oh my gosh, Ramona! What a GREAT Saturday supper this would make. I must admit...my meatloaves don't always come out so very moist! But this looks fabulous! I especially love the peppers and onions! And to me...the whole purpose for making meatloaf is to have leftovers for those great sandwiches! This looks delicious! I hope you have a great weekend and the most wonderful Mother's Day! : )
ReplyDeleteIs it bad that I'm sitting here with a cup of coffee in my hand and I still want this? I think it would make an awesome breakfast...just slice me a piece, lay on some peppers, I'll put a sunny-side up egg over them and be good to go!

ReplyDeleteYou can definitely try any of the them. Just make sure they are moist so it keeps the meatloaf moist and it should work well. :) Hope you enjoy. :)
