Cherry Cheesecake Ice Cream Pie

 My son is pretty picky when it comes to vegetables, but he loves most fruits. His first exposure to cherries didn't seem promising, but this summer he has become a big fan of this sweet/tart little gem.  That's good because my daughter, husband and I love them to bits.  We wait all year for them to come into season and for the price per pound to come down so we can go a little cherry crazy.  We usually just wash and eat the cherries as nature made them, but my son's controlling the recipes this week so he asked if I could make something for his birthday with the cherries.  I was going to make a smoothie or a traditional cherry pie, but I wanted something that would wow his socks off.  So I put together this easy Cherry Cheesecake Ice Cream Pie and he loved it to bits.  Ice cream, cheesecake, cherries, chocolate and graham crackers.... with ingredients like this...anyone would love this sweet treat.

  

Ingredients:
2 cups pitted fresh cherries
3 cups softened ice cream
1 (8oz)  brick cream cheese softened
1/2 cup mini chocolate chips
1 cookie pie crust (store bought or homemade)
sugar if needed (optional)

Note: These ingredients make two pies.  If you want one pie only, reduce ingredients by half. 
 Directions:
Pit cherries and coarsely chop.  Use an electric mixer to blend cream cheese and then add the softened ice cream and blend together.  Add chopped cherries and mix well.  If you want the dessert sweeter than it tastes at this point add a little sugar.  I did not need to add anything because it was already sweet enough with the cherries and ice cream.  Pour into prepared cookie pie crust.  Sprinkle with mini chocolate chips.  Freeze for 8 hours or over night.  Thaw on counter for 20 minutes to slice and serve. Garnish with whip cream (optional).  Enjoy.
