Red, White and Blue Ice Cream Sundae

 Happy 4th of July to everyone here in the United States!! I wanted to make a cool patriotic sundae to enjoy during this heatwave we are having around most of the country.  I bought some vanilla ice cream and jazzed it up with homemade strawberry and blueberry sauce. The kids loved it and they were perched at the table with spoon in hand to attack this sundae bowl as soon as I was done taking my pictures.   The great thing about either of these sauces is it can be used over plain yogurt as well.  We tested it with yogurt and a little honey for extra sweetness and it was fabulous.   You can also add some maple syrup to the sauces for a fun maple-berry topping to pancakes or waffles.  This can even be a great berry flavor for smoothies.... the possibilities are endless. :)  Hope you all have a wonderful and safe holiday!!

 
 Ingredients:
Strawberry Sauce:
1lb of cleaned strawberries
1/2 juice of lemon
2-3 Tbs of sugar
1 Tbs of cornstarch
2-3 Tbs of water

Blueberry Sauce:
2 cups of frozen or fresh blue berries ( I used a mixture of both)
1/2 juice of lemon
2-3 Tbs of sugar
1 Tbs of cornstarch
2-3 Tbs of water



To assemble sundae:
Vanilla ice cream
whip cream
fresh strawberries and blueberries for garnish



 Directions:
 Place fruit in a food processor and blend until you get a chunky fruit  puree.  Add all other ingredients into pan and allow to simmer and bubble for 10-15 minutes until it becomes thick.  Allow to cool completely before using it on ice cream or yogurt.  Store in an airtight container in the fridge. Enjoy.
