Pina Colada Popsicles

We have been having very HOT summer weather (mid 90s) these last few weeks of spring.  I bought a new popsicle mold so I was excited to have an excuse to use it.  I have been wanting to make these Pina Colada Popsicles for a while and this was my chance since I had all the ingredients at home.  These popsicles have a lot of texture between the shredded coconut and the pineapple bits.  My kids and I ate the first three pops and we all said the same the thing upon first bite... "Wow!".  The kids each ate 2 more pops the same day and they would have finished them off if I let them.  This was a fantastic popsicle to christen my new Popsicle mold. 


Ingredients:
1 cup finely diced fresh pineapple
6-7 Tbs of unsweetened coconut cream(see note)
2 1/2 cups of 100% pineapple juice
Juice of half a lime
2-3 Tbs of shredded sweetened coconut (optional)
sugar as needed to taste
1/4 cup  of rum (optional for adult pops)



Note: To get the coconut cream out of unsweetened coconut, do not shake can.  Gently open can of coconut milk and scoop out top thick coconut cream.  The watery coconut milk will be at the bottom.  Do not waste it... it's great in a curry.

Directions:
Clean pineapple, then finely dice fresh pineapple.  Place into a blender with pineapple juice, cream of coconut (see note), shredded coconut, lime juice and sugar.  Add alcohol here too if you please for adult only pops.

Hit the pulse (do not blend) 4-5 times until well combined. Taste test the mixture for sugar and flavor.  Place in popsicle molds and freeze overnight until set.  Serve frozen.  Enjoy.

  3. It has been CRAZY HOT! Agh. I can't handle it. But maybe, with these pina colada popsicles, I can survive the summer in style! :D
