Banana, Date and Almond Smoothie

I love the versatility of dates because you are only limited by your own imagination.  So far,  I have made sweet and savory dishes with my large bag of dates.   Now what else could I use them in... how about a healthy smoothie?  My kids didn't care for the dates plain, but I was determined to get them to try it somehow.  So being the sneaky mother that I am,  I offered to make them a smoothie after school.  They didn't question me about the secret ingredient and they loved it.  Score one point for Mommy on this one-- trust me I don't win all the picky eater battles. These smoothies are super healthy and a great snack or breakfast. As eager as I was to finish up my bag of dates, now I'm getting sad that I'm getting close to the end of the bag just when it started to get fun finding fun ways to use them up. Hmmmm.. maybe I should buy another bag. :)
   
 Ingredients:
1 cup of pitted dates
1 ripe banana
3-4 cups of unsweetened almond milk (substitute soy or regular milk)
1/2 cup of plain yogurt
some freshly grated nutmeg (or a pinch of ground nutmeg)
a pinch of ground cardamom powder
1/2 cup of ice (optional)
whip cream (optional)
Directions:
Put all the ingredients into a blender and blend for 1-2 minutes until smooth.  Serve immediately. Enjoy.

  5. This looks delicious Ramona and dates add a natural sweetness but not too sweet. I say buy another bag of dates. I like that whip cream on the top too. I used them to sweeten a strawberry vegan ice cream over the weekend.

  11. How interesting to have dates in the smoothie! My kids will most likely drink this smoothie without realizing there are dates that they don't really like in there. ;-) Fabulous recipe Ramona!
