Tropical Fruit Salad

Yum
I love a good fruit salad. I can eat it for breakfast as a snack or even a dessert.  I made this fruit salad for a tropical themed party and it was such a refreshing dish that everyone enjoyed. Any fruit works, eating a whole bowl of fruit is one dish you can feel good about eating.  The hint of lime juice, honey and sweet coconut takes it from just eating a bowl of fruit into a tropical party in your mouth.

Ingredients:
1 Pineapple cored and cut into chunks
2 kiwis peeled and cut into chunks
1lb of strawberries hulled and cut into chunks
1 mango peeled and cut into chunks
2-3 bananas peeled and cut into large slices (see note)
1/2 cup of sweetened coconut
Juice of 1 lime
1-2 tsp of honey

Note:  Do not add the bananas until you serve otherwise they will get brown and mushy.

Directions:
Mix all the ingredients together and serve right immediately. Enjoy.

  10. This looks so freaking good! :D And did you get your new camera?!?!?!?!? The shots are so vibrant! I got a point and shoot to hold me over until I can get a 'big girl' camera, but the picture quality sucks so I am going to return it. Sigh.... Happy Weekend my friend! :D

  16. Hello! Recently I was challenged to cook Sri Lankan food and that's how I found your blog. I made the fragrant rice and the tropical food salad that you have posted. The salad was a big hit. Everyone had seconds, and it was gone in no time. As for the rice, it was truly fragrant and delicious. I loved it! I enjoyed cooking these recipes and finding out about Sri Lankan cuisine, plus I enjoyed checking out your beautiful blog. If you want to see the results of how your dishes came out cooked in my Greek kitchen, please come visit:

Once again, thanks for the great recipes. Next, I want to make hoppers. I don't know when I will get around to it, but trust me, I will.
