Asian Salmon Burger with Spicy Tartar Sauce

 Fish sales must skyrocket during the Lenten season since people don't eat meat on Fridays. I love fish anytime and these Asian Salmon Burgers are a quick and budget friendly because I used canned salmon.  I try to only buy wild salmon because farm raised salmon does not have the same health benefits from what I have read. I accented these salmon burgers with sesame seeds and topped it off with a spicy tartar sauce.  Everyone in my family (including the picky eaters) loved the salmon burgers.  I can't wait to make these burgers again next week. :)

 Ingredients:
2 (6oz) cans of salmon
1 bunch of green scallions minced or finely sliced
1 egg
red chili flakes to taste
salt and black pepper to taste (see note)
1 Tbs of soy sauce
1/2 cup of bread crumbs
1 Tbs of Dijon mustard
1-2 cloves of garlic grated
1/2 Tbs of grated fresh ginger
sesame seeds

 Note:  before adding salt check the saltiness of your canned salmon. Remember there will added salt with the soy sauce.

Other garnishes:
Hamburger bun
lettuce
onion

Spicy Tartar Sauce:
1/2 cup of mayonnaise (light is fine, I don't recommend fat free)
1 Tbs of pickle relish
1 Tbs of sriracha sauce
salt and pepper to taste
1 Tbs of minced green tops of scallions. 
 

Directions:
Drain canned salmon well. Mix with minced scallions, egg, black pepper, soy sauce, bread crumbs, ginger, garlic and Dijon mustard.  Form 4-6 burger patties depending on the size of your bun.


Heat a grill pan with 1 tsp of canola oil and fry the burgers on medium heat for 3-4 minutes per side. After flipping sprinkle sesame seeds on the cooked side.  Flip once more to help sesame seeds toast for a minute.  Serve on bun with tartar sauce and garnishes.  Enjoy.
