Pizza Cookies

I was giggling with excitement the whole time I was taking these photos. Doesn't my cookie look like a real pizza? I hope you see it... otherwise I'm the only one thinking this looks cool.  My daughter gave me the idea when I baked a batch of cookies and topped them with strawberry jam and shredded coconut.  She called them little pizzas.  So that got my mind working and I decided I must make a cookie that really looked like one.  I was so thrilled that this "experiment" came out.   My kids were thrilled too, especially my daughter who flaunted to her brother that it was all her idea. :)  I actually baked this cookie on a pizza stone so it really felt like I was making a pizza.. What fun!  Okay we did do something not usually done with a pizza we topped each slice with some whip cream.  That's okay... we'll just call that the Parmesan cheese. LOL!  If you have kids or are a kid at heart, make this pizza cookie and enjoy.

These are the cookies that inspired the big Pizza Cookie

 Ingredients:
1 box of yellow cake mix
2 eggs
1/3 cup canola oil
strawberry jam (as needed)
sweeten shredded coconut flakes (as needed)

Directions:
Mix cake mix, eggs and oil together.  If you are forming a large pizza grease you pizza pan and then form a pizza crust. I took large dollops of cookie batter and plopped it around the pizza pan then greased my hands a bit and connected them together to make one crust.  Make sure you make the crust small by 1 inch around the edge so the cookie has a place to spread out.  If you want to make mini cookies place them on a greased baking sheet as normal. 

Bake the small cookies for 14-15 minutes at 350 degrees (depending on the size).  You want them to start getting brown around the edges. Take them out of the oven and use a fork to flatten the puffy tops in the center. Add jam and coconut and bake for another 1-2 minutes. Allow the cookies too cook completely on the cookie sheet. Enjoy.




For the large pizza:

For the large pizza bake in the oven for 20 minutes until edges and top are golden brown.  Top the entire pizza with enough strawberry jam and shredded coconut. Bake for another 1-2 minutes.  Allow to cool on pizza pan. Slice and Serve. Enjoy.

  11. Such a great idea...the lil pizza cookies reminds of the actual mini pizzas we used to order from our school canteen...looked exactly the same, though it wasnt a cookie!!

  18. My granddaughter would love these! We'd have to make them without the coconut because of her allergies. Maybe chocolate chips would be a good substitute.
