Chocolate Covered Kiwi Pops

It's summer and that means grilling season and frozen treats.  I was asked by the folks over at FoodNetwork.com to check out some of their grilling and frozen treat recipes and showcase one of them.   Of course summer also means kids at home with me so I sat down with my kids to check out the frozen treats since keeping cool with a yummy treat is their #1 priority these days.   My daughter saw the words kiwi and chocolate pops, so that's the first one we tried.  Let me tell you... I think I am just as much in love with these little beauties as the kids were.  First of all it's fruit and I love kiwi.  Second, it's chocolate.. hello...do I need to say more?   These treats were a cinch to make with the kids and they turned out great. My daughter and I actually had a debate over who should get the last one... well I won since I bribed her with the fact that I'll be making another batch of these again tomorrow.   
 

Ingredients:
2 kiwis, peeled and sliced into rounds
2 tablespoons coconut oil
8 ounces small pieces of chocolate (dark, milk or bittersweet)

Special equipment:  popsicle sticks
                                 parchment paper (optional)
                                 baking sheet
                                 freezer

Directions:
Step 1:  Wash and peel your kiwis.  You need a semi-ripe kiwi (over ripe kiwis that are mushy are not good for this recipe in my opinion).  I used a knife to cut off the ends then a vegetable peeler to peel the kiwi.   Slice the kiwi (depending on size) into 3-4 thick slices (remember you have insert a popsicle stick).

Step 2:  Place the kiwi with the popsicle stick on a parchment lined baking sheet then into the freezer.  Allow kiwis to harden (about 20 minutes)

Step 3:  While the kiwis are in the freezer, make your melted chocolate.  Create a double boiler by using a pan with about 2 inches of water on the stove top.  Then place a heatproof bowl (I used a pyrex glass bowl) above it.

 
You do not want the water to touch the base of the bowl.  The steam will heat the bowl and melt the chocolate for you.    Add the chocolate and coconut oil.  Stir until smooth.




Step 4:  Take your frozen kiwi pops and dip them into the chocolate one at a time until coated then place them back on parchment lined baking sheet.  Put the chocolate coated kiwis back into the freezer for another 10 minutes until the chocolate is set. Enjoy.
