Pickled Onion and Special Sauce Hot Dogs

 I have loved eating your typical mustard and relish hot dogs for as long as I can remember.  I decided to jazz up this set of hot dogs with ingredients you don't typically find on your hot dog condiment bar.  So try some homemade pickled onions, boiled egg, special sauce and some finely chopped jalapeno for something different.  These hot dogs were so good, I couldn't help but eat two right after I snapped the photos.   The best part is my kids loved them too, even the self proclaimed "onion hater".


Ingredients:

Favorite Hot Dogs
Favorite Hot Dog Buns
Finely diced (minced) jalapeno peppers
Hard boiled eggs sliced or crumbled





Quick Pickled Onions
3/4 cup vinegar (white, cider or red wine)
2-3 Tbs sugar (or splenda for low carb version)
salt to taste (about 1 tsp)
1 cup thinly sliced red, white or yellow onions

Directions: Bring vinegar, sugar and salt to a boil 1-2 minutes.  Place sliced onions in a glass jar or bowl and pour the boiled pickling liquid over the onions.  Allow to sit for 10-15 minutes  on the counter.  Make sure all the onions are touching the liquid (I shook the sealed jar several times to do this).  Once onions are pickled, keep refrigerated until needed.

For Special Sauce:
1/2 cup mayonnaise
1/2 cup sour cream
2 Tbs Sriracha sauce
1 Tbs worchestshire sauce
1/4 cup buttermilk
1/2 tsp granulated garlic powder
1 tsp paprika
salt and black pepper to taste

Directions:  Mix all ingredients together and keep refrigerated until needed.

Directions:
Make the special sauce and the pickled onions as directed.  Heat hot dogs (I like to brown the outside a bit for extra flavor.   Assemble your hot dogs with special sauce, pickled onions, minced jalapenos and the sliced/crumbled boiled eggs.   Enjoy.
