Spicy Kale Chips

Yum
I have always loved kale (yes even as a child).  So I am definitely not new to the kale loving bandwagon.  Now what I am excited about today is the idea of making kale chips.  That means I can even snack on this healthy and low carb treat any time   Kale is great in almost anything smoothies, curries, soups, stir fries etc.   Now with these kale chips we can all say goodbye to the potato chip bag.

Ingredients:
One bunch kale (stem removed) and cut into chip size pieces
1 Tbs olive oil
red chili powder (1/4 tsp) or to taste
sea salt for seasoning to taste

Directions:
Mix red chili powder, salt and olive oil together.   Pour over cleaned and cut kale and coat well.  Place on a baking sheet in a thin single layer and bake in a 300 degree oven for 20-25 minutes.  Make sure to flip kale half way while baking (at about 10 minutes).  Taste for salt and season with a sprinkle more salt as needed.  Allow baked kale to cool on baking sheet for a few minutes before serving.  Serve and eat immediately or store in an airtight container for 24-48 hours.   Enjoy.
