Garlicky Parmesan Roasted Zucchini

Zucchini is in full bounty as summer draws to a close.  It's one of my favorite go to vegetables since it's so adaptable in both savory and sweet dishes.  It's also fantastic because it's low-carb.  I made these Garlicky Parmesan Roasted Zucchini and served them with the Parmesan Crusted Chicken that I featured yesterday.  This is such an easy side dish to make and it's perfect for causal meals as well as entertaining guests.



 Ingredients:
4 zucchini washed and cut into wedges
2-3 Tbs softened butter or margarine
1/4 up to 1/2 tsp granulated garlic powder 
1/2 tsp dried basil 
1/2 tsp dried parsley
black pepper and salt to taste 
1/2 cup Parmesan cheese 
 Special equipment: parchment paper


Directions:
Melt butter/margarine in microwave or on stove top (do not burn).  Then mix with garlic powder, basil, parsley and black pepper. Salt zucchini lightly (the Parmesan cheese will add more salt flavor).   Toss zucchini in butter mixture.  Place tossed zucchini on parchment lined baking sheet.  Sprinkle each piece of zucchini with some Parmesan cheese.  Bake in a 400 degree oven for 20-30 minutes until zucchini is done to your desired texture and cheese has turned golden brown. Serve hot.  Enjoy.
