I had to share this recipe that I saw on the Rachael Ray Show. She had a guest cook (actress, Kirstie Alley) come on and make a Parmesan Crusted Chicken that was perfectly low-carb. I knew I had to try it out from the sound of it. I love garlic so I decided to add a few more ingredients to make the sour cream coating garlicky and delicious. We at this with some great roasted vegetables and salad. It was such a wonderful low carb meal that even the non-low carb eaters wanted seconds.
5-6 boneless skinless chicken breast
3/4 cup sour cream
1/2 cup Parmesan Cheese
1/2 tsp granulated garlic
1/2 tsp dried basil
1 tsp dried parsley
salt and pepper to taste
on a baking sheet that is sprayed with cooking spray. Then bake in a 425 degree oven for 30-35 minutes or until cooked through and cheese has browned. Serve hot or cold. Enjoy with roasted vegetables or salad.
