Cauliflower Salad (Low Carb Potato Salad Substitute)

Summer is almost over, but I had to sneak in a bbq/picnic salad to share with you today.  Since I am eating low carb, potato salad has been taken off the list for me.  So I had to come up with a potato salad substitute.  I use mashed cauliflower as a mash potato substitute so why not try it out for potato salad.  It worked out great.  Cauliflower has found a real place in my heart these days... so you will definitely see more dishes coming your way.


Ingredients:
1 head cauliflower chopped and steamed until tender
1/3 cup of finely diced celery
1/3 of finely diced red onion
4-5 slices of bacon diced, fried and crumbled
1-2 stalks of scallions finely sliced
1 pepper diced (bell, jalapeno, serrano- your choice)
1/2 cup of light mayonnaise (or more to taste)
1 Tbs of Dijon Mustard
1/4 tsp of celery seed
1 tsp of red or white vinegar
1 tsp of white sugar (or splenda)
Salt and Black Pepper to taste
4 hard boiled chopped

Directions:
Cut and steam cauliflower until tender (but not mushy.  You want the cauliflower to still stay in shape, but be tender like a potato in potato salad.  Then allow cauliflower to cool.  Add with all other ingredients.  Adjust seasoning to taste. Top with more bacon crumbles before serving.  Serve chilled. Enjoy.

  5. Using mashed cauliflower sounds like a brilliant idea for this salad! My mom is low carb and she freakin' loves cauliflower so I'll be sure to send this over to her ASAP. :D
