Happy September 1st and Labor Day. Since it's Labor Day and everyone is having a day off from work and school, I decided to whip up a quick and easy Green Drink to get everyone ready and energized for when they go back to work and school tomorrow. This green drink was really delicious and you do not taste the "green" at all. My son was a little weary at first, but he was licking his green mustache off his face and asking for more. There are a few key elements to making this drink really extra delicious. First of all I used coconut water to give it not only a nutritious base, but some great flavor too. I also added some super sweet frozen red grapes and a large golden delicious apple for sweetness so no sugar or sweetener was needed. The frozen red grapes are very important because they act as the "ice" for the drink and make it nice and cold (my coconut water and greens were also cold from the fridge). After drinking this green drink you may want to tackle all those chores you have been putting off (or maybe that's just me).
Ingredients:
- 2-3 cups coconut water
- 2 large handfuls of fresh greens (I used a combination of organic baby spinach, kale and swiss chard)
- 1-2 cored sweet apples like golden delicious (with skin on)
- 1 cup washed frozen red grapes
- juice of one lime
