Tropical Fruit Salad

I love a good fruit salad. I can eat it for breakfast as a snack or even a dessert.  I made this fruit salad for a tropical themed party and it was such a refreshing dish that everyone enjoyed. Any fruit works, eating a whole bowl of fruit is one dish you can feel good about eating.  The hint of lime juice, honey and sweet coconut takes it from just eating a bowl of fruit into a tropical party in your mouth.

1 Pineapple cored and cut into chunks
2 kiwis peeled and cut into chunks
1lb of strawberries hulled and cut into chunks
1 mango peeled and cut into chunks
2-3 bananas peeled and cut into large slices (see note)
1/2 cup of sweetened coconut
Juice of 1 lime
1-2 tsp of honey

Note:  Do not add the bananas until you serve otherwise they will get brown and mushy.

Mix all the ingredients together and serve right immediately. Enjoy.

Everyone had seconds, and it was gone in no time. As for the rice, it was truly fragrant and delicious. I loved it! I enjoyed cooking these recipes and finding out about Sri Lankan cuisine, plus I enjoyed checking out your beautiful blog.
