Ingredients:
2 cups of shredded carrots
1 15(oz) can of black beans drained and rinsed
1-2 garlic cloves grated
1 jalapeno chili seeded and finely diced
1/2 a medium onion finely diced

Sauce:
1/4 cup mayonnaise
1/4 salsa (fresh or from a jar)
1/2 tsp of ground cumin
1 tsp of chili powder (used for chili con carne)
1/2 tsp of sugar (or 1 tsp if you like it sweet)
1Tbs rice wine vinegar
1 Tbs soy sauce
Salt and Pepper to taste
Mix dressing well and pour dressing over salad ingredients. Then mix all ingredients together and marinate for 30 minutes or more in refrigerator.
Serves 4-6 people as a side dish Enjoy.
