My Husband's Birthday Dinner Plate |
Ingredients:
1lb of your favorite lean ground meat (I used chicken)
large jar of tomato pasta sauce (45oz)
3-4 cloves of garlic minced or grated
1 tsp dried basil
1 tsp dried parsley
1 tsp dried oregano
1-2 tsp of brown sugar (to taste)
1 onion diced
red pepper flakes to taste
salt and black pepper to taste
1 bell green bell pepper diced
1 box of long lasagna noodles cooked 1 minute shy of al dente
8oz of shredded mozzarella cheese
For the roll filling:
8oz frozen spinach (defrosted & wrung dry)
16 oz or 2 cups of Ricotta cheese
1/3 cup Parmesan cheese
salt and pepper (to taste)
1 egg
1/8 of a teaspoon freshly grated Nutmeg
salt and black pepper to taste
Directions:
Boil your pasta and drain. Immediately lay the noodles out on a baking sheet so they don't stick together. If you don't do this they will stick and you will have a hard time making your rolls.

Make the spinach ricotta filling. Defrost frozen spinach and wring dry. Mix will all the ingredients and set aside.

Take each strip of lasagna and put some filling along the length of it. Then roll it up as shown in the picture. Place 1/3 of the sauce on the bottom of the baking dish (you will need one large baking dish or two smaller ones to fit all these roll ups). Place the roll ups seam side down and arrange accordingly.

Spoon remaining meat sauce over each of the roll ups the cover with 8 oz of shredded Mozzarella Cheese.
Bake in a 350 degree oven for 25-30 minutes. Allow lasagna to sit for 10 minutes before serving. Serve hot. Serves 6-8 people. Eat with salad and garlic bread to make it a wonderful meal. Enjoy.

Note: I few of you are curious about the garlic bread rolls... I forgot to buy a loaf of Italian bread for the big dinner so I had to improvise. I just baked some store bought biscuits. Then I cut them in half and just made a quick butter/ garlic powder and dried parsley mixture. I put them back in the oven for a few minutes to melt the butter and become yummy. They were really, really good. :)

Ooooh, those look delicious. I would request them for my birthday too (though I'd probably want one of your spicier curry dishes more). Hubby saw this over my shoulder and wants to know what the rolls are. :)
ReplyDeleteThese are too pretty. I bet they taste even better! I love that there's spinach in 'em. And that garlic bread/biscuit on the side looks pretty yummy too!
ReplyDeleteThese look so good, Ramona! I love the spinach in the filling too!
ReplyDeletewow....no words dear....super yummy Ramona...
ReplyDeleteRamona, these look delicious. Your husband is a lucky man to have such a great cook for a wife! The whole meal looks wonderful. I'm with everyone else...what about those rolls?
ReplyDeletePerfect comfort food to me. I could eat that right this minute and be completely happy.
ReplyDeleteThis is such a great idea! Having the lasagnas rolled almost makes them like little personal lasagnas! LOVE
ReplyDeleteChristiane and Terri I had to do a double take on what you guys were talking about. When rolls were mentioned... my mind thought of the lasagna rolls. :) I forgot to buy a loaf of Italian bread and had to improvise. I baked some store bought biscuits. Then I cut them in half and just made a quick butter/ garlic powder and dried parsley mixture. I put them back in the oven for a few minutes to melt the butter and become yummy. They were really, really good. :)
ReplyDeleteI have made these rolls before. Delish! I am going to be attempting lasagne cups here soon. Great minds think alike! =) Beautiful Ramona!
ReplyDeleteHappy Birthday to your husband, Ramona! I love the idea of lasagna rolls. I will have to try it as we love lasagna too. :) Thank you for sharing! Hugs!
ReplyDeleteThose look delicious--I love the idea of using ground chicken in this to keep it a bit lighter.
ReplyDeleteWow! I just looove this idea! I'd be a lot more likely to make this than to make an entire HUGE pan of lasagna...sometimes I don't need to feed an army. These look perfect and yummy!!
ReplyDeleteI love lasagna, too, and these rolls look delicious!!! And your garlicky biscuits go perfectly with your dinner!
ReplyDeleteYou're right, rolls are easier to manage. Hope the Mr. had a happy birthday!
ReplyDeleteLooks delicious! I never tried changing the shape of lasagne and they look delicious!

Yum! A delicious, healthy and perfect comfort meal. Love your presentation and thanks for the step by step tutorial.
ReplyDeleteThat's what my husband always requests for a birthday meal as well! I've been wanting to try doing rolls some time when I didn't feel like making the whole casserole for a weeknight meal. Yours look great!
ReplyDeleteI love this recipe and can't to try it out soon! I'm actually hosting a dinner on sat and I think this would be perfect to try. ..
ReplyDeleteI am drooling over the photos :-)
ReplyDeleteWhat a cute idea! Much less messy - I approve! I love lasagna, the saucier and messier the better ;)
ReplyDeleteMMMmmm, I want to try lasagna rolls, they are just so much prettier than regular lasagna! And yes, easier to serve too!
ReplyDeleteHappy belated Birthday to your husband! He's a really lucky man! This lasagna rolls look delicious. I haven't made lasagna at home... I know I'm rare kind right? LOL. But I love everything about lasagna though. It's one of my favorite comfort food!
ReplyDeleteThis looks like a wonderful dinner. I love lasagna, but my husband isn't a huge fan. Roll-ups are a great compromise for us, because I can make just a few of them, and he isn't stuck eating lasagna for a week straight :)
ReplyDeleteHappy birthday to your hubby!! I love the lasagna rolls too! So much easier!
ReplyDeletethis looks wonderful deliciously done
ReplyDeleteYour hubby sounds exactly like my boyfriend! He would definitely ask for lasagna for his birthday meal! (Happy bday to the hubby by the way!) I love that these are rolls in individual portions. Just a great idea, sometimes cutting & serving lasagna gets pretty messy!
