Ingredients
2-3 cups of prepared black beans (see recipe Mexican Style Black Beans) (see note)
4-6 cup of cooked brown rice
1/2 cup of prepared salsa
1 medium onion sliced
2-3 green chilies sliced
2-3 cloves of garlic grated
1 tsp of ground cumin
1/2 tsp of dried oregano
red chili flakes to taste
salt and pepper to taste
1Tbs of canola oil
Note: If you decided to use canned beans you will have to season the rice a little more since the beans I used were well seasoned.

Directions:




Add the prepared black beans and salsa. Saute and cook for 3-4 minutes. Taste for seasoning.

ReplyDeleteOh yummy! I love having something on the weekend that I can use for many different dishes throughout the week. I would love this for a meal but my husband would be begging for another meat part of the dinner.
ReplyDeleteMy mouth is watering. I am always thrilled to have more ideas for leftovers. I could eat that whole dish. Since I am Vegetarian, this is my kind of meal. ReplyDeleteI LOVE black beans and you know I love rice. I would eat this entire thing by myself! I'd throw some cheese on top though :) And I love your cast iron pan!
ReplyDeleteWow, wow, wow! I am in love with this dish! I make a way suckier (I know, I just made up a new word:) version of this sometimes, but man oh man, does this look 100 times better! I swear I could eat like 2 platefuls of this, no problem! And with some grilled chicken---oh man, I think I might start crying it's so good!
