I have a confession to make.... I like shopping for candy the day after a big holiday because they are on clearance. Okay... there... I said it. After any holiday you will find Halloween Candy, Christmas Chocolates, Valentine's treats and Easter confections discounted from 50% to 75% off. That's when I put my spending hat on and I buy several bags to make desserts. So these lovely peanut butter cups you see pictured above had pretty little pastel foiled wrappers from Easter, but the chocolate inside is your standard Reese Peanut Butter Cup. So why would I pay $4.50 a bag when I can get them for $1.99? I love adding chocolate to my banana bread so I added peanut butter cups instead. With the exception of the chocolates, this is a pretty well rounded banana bread full of wholesome ingredients. I would definitely say it's a great way to eat my chocolate.
Ingredients:
1 cup whole wheat flour
3/4 cup old fashioned oats
3/4 cup all purpose flour
3-4 bananas mashed
1/3 cup honey
1/4 sugar or splenda
1/4 cup peanut butter
1 tsp baking soda
1 tsp baking powder
1/3 cup buttermilk
sprinkle salt (see note)
2 eggs
1/4 canola oil or applesauce
1 tsp vanilla
1 tsp cinnamon powder
12-20 coarsely chopped peanut butter cups (substitute chocolate chips)
powdered sugar or melted chocolate as a garnish
Note: You may not need to add salt if your peanut butter and peanut butter cups are salty enough.
Directions:

Mash the bananas well. Add eggs, buttermilk, oil, vanilla, honey, sugar, peanut butter and cinnamon together. Mix well. These are your wet ingredients.
In a separate bowl measure the dry ingredients: flours, oats, baking soda together. Add the dry ingredients to the wet ingredients and stir gently with a spoon until batter is mixed.

Finally add the chopped peanut butter cups and mix in gently. Spray or oil a baking pan well. Pour batter into baking pan and put into a 350 degree oven and bake for 40-45 minutes or until done.

ReplyDeleteOh Ramona!! How fabulous is this cake! I'm always on the lookout for ways to combine bananas and chocolate...but adding the peanut butter and the oats puts this right over the top for me! And I'm with you....love to hit those 'day after' sales! : )
ReplyDeleteThis looks scrumptious Ramona. Love the idea of using peanut butter cups... delicious :-)
ReplyDeletePeanut butter and banana? AND chocolate? What a combo! Love the way you've casually thrown the little chocolate cups in the picture - very artistic! Yup, definitely a good way to get your daily chocolate!
ReplyDeleteMmm I love peanut butter and bananas. This is a winner. :-)
ReplyDeleteMmmm, that bread looks amazing! And with the pb cups... *slobber*
ReplyDeleteI wish you are my neighbor. I have so many candies after holidays and I don't know what to do - I toss most of the stuff because I could be dangerous around them. After my son started kindergarten, I learned that we can donate candies to the school (they'll ship somewhere - I forgot). Next time I should make banana bread with the chocolate inside. My kids will be happy. =D
ReplyDeleteMmm, this bread looks yummy. Who can resist pb and banana together. Not this girl.
ReplyDeleteThe title says it all girl! This yummy treat requires at least 2 slices.
ReplyDeleteI can't think of one thing that I don't like about this!
ReplyDeleteDang girl, this is beautiful. I want to move in next door to you and constantly drop by to "borrow a cup of sugar".
ReplyDeleteHa! My husband came home with bags of Easter candy last week. Great idea throwing those into bread. It sounds fantastic!
ReplyDeleteThat is my favorite time to buy candy as well. I know its not good for you and when it costs more I am better able to refrain. When it is on sale who can say no?
