Avocado Pineapple Popsicles

The produce section of my grocery store had a bag of 4 avocados for $1 recently.  They were in the clearance section because they were perfectly ripe and ready to use.  I have paid $2 for a single avocado before and I had to jump at the chance to get for 4 for a $1.  Then I brought them home and had to come up with something quick to use them up.  I could have made a simple guacamole or dip, but I decided to be a little daring and try to make a dessert up with them.  My sister had shown me a recipe for avocado and kiwi ice cream so I decided make a twist on that and make Avocado Pineapple Popsicles.  It was quick and easy and a real crowd please for the kids and adults.  The avocado made the popsicle very creamy and the crushed pineapple gave a nice texture.  I'm going to frequent my grocery stores procedure section and hope I get more fantastic deals. 




Ingredients:
2 ripe avocados
1 (20oz) can of crush pineapple in pineapple juice
1 cup of coconut milk
juice of 1/2 a lime or a whole lime -to taste
1/4 cup of sugar or splenda (add more to taste)

Directions:
In a blender place pineapple juice from the can of crushed pineapple, coconut milk, sugar, lime juice and avocado.  Blend until until smooth and creamy.  Add crushed pineapple next and pulse the blender several times so to incorporate the pineapple, but still have some texture left.   Put avocado/pineapple mixture into popsicle molds and freeze until set. To removed pops, all popsicles to sit on the counter for 5 minutes or run under warm water to loosen.  Serve immediately.  Enjoy.

  1. Wow, these are so creative...I adore both pineapple and avocado! I bet the avocado's smoothness made them more like ice cream bars than popsicles...mmmmmm.

  4. Really? I would have never thought of using Avocado, but it makes perfect sense! They are so cheap here in California, I am going to the grocery today! This is going to make a great summer treat!

  6. Ramona these are some wild popsicles, I love it who would have thought to pair those ingredients. Avocado is a fruit pear. I am going to have to try these. Have a fabulous weekend my friend.

  9. I wish I could have one or 2 right now! It’s great that you don’t use any eggs in this recipe. I’m always a bit scared working with “raw” eggs. I bet these were gone in no time!

  12. Now that's creative! I've combined avocado and pineapple in a salsa, but never in a popsicle! I bet the avocado did make it creamy. Great treat! Would love to bite into one!

  14. I love that your kids liked these! Avocado juice is very popular here, but I've been too chicken to try it. I just may buy some to make popsicles too. I love the crushed pineapple for a little texture too!

  15. This has your style written all over it. I'm stuck on only using avocados in a savory way and mostly as gauc. Good idea to put them in a popscicle.

  16. I just made these and used the extra to make a smoothie just by adding some ice. I didn't add any sugar. Awesome Popsicles.

  17. 4 AVOCADOS FOR $1?!? IT WAS A SIGN FROM THE AVOCADO GODS!! This popsicle is obviously the best popsicle in all the land, since it was made with so many magical avocados. :D
