I loved the
Sweet Chili Sauce so much that I knew it would taste delicious over chicken. I decided to make it like a spicy,sweet and savory stir fry chicken dish. I served this over rice for my husband and kids and they loved it Since I am doing a lower carb diet these days I made a simple green salad and ate the chicken over salad. This used up some of my treasured homemade chili sauce... I guess I will have to keep making the sauce so I can eat this chicken often.
Ingredients:
2lbs of boneless chicken breast cut into 1 inch pieces
1/4 cup soy sauce (to taste)
2 Tbs sesame seeds
2 bunches green onions sliced (leave some green tops for garnish)
1 bell pepper any color sliced
1 medium onion sliced

Add 1Tbs canola oil then saute onion, bell pepper and green onions. Remove onion/pepper mixture from pan until later. Then heat 2 Tbs canola oil and brown chicken with a little salt and black pepper.

Lower heat to medium low and add chili sauce and soy sauce to pay. Cook for 3-5 minutes to allow chicken to absorb some of the chili sauce flavors. Then sprinkle with sesame seeds.

Add the cooked pepper/onion mixture to the chicken. Toss well and taste for seasoning. Serve over rice, noodles or salad. Enjoy. Note: I also steamed some snow peas to enjoy with the meal.
