2 Minute Chocolate Mug Cake with Caramel Surprise

I have seen microwave chocolate cakes around for a while.  I always thought they were so cool, but I never tried to make one myself. Then one day I was watching Rachael Ray when Sunny Anderson from the Food Network came on and did 5 mug style desserts in the microwave in 10 minutes.  I had all the ingredients for this Chocolate Cake in my house so I did it that day.  The cake was pretty good and really moist.  I only had Nesquik Chocolate Syrup in the house so that's what I used and it was not my favorite chocolate flavor for the cake.  The caramel would have been cool, but it didn't melt in the 40 extra seconds I put it in for... I blame my microwave.  But all it in all the concept and results were pretty darn good!   This recipe has sparked a new passion for me.  I am going to start playing around more with this concept of mug cakes and see what I can come up with too. :)

Cooking spray
1 egg
4 tablespoons chocolate syrup
2 teaspoons flour
1/8 teaspoon cinnamon
A pinch of salt
2 caramel candies
1 1/2 tablespoons sugar

My addition:  caramel Syrup
Garnishments: raspberries

Spray both microwave safe mugs with cooking spray.  Then beat egg and mix all ingredients (except for the caramel candies) to form a batter. Pour batter into sprayed mugs. Cook on high for 2 minutes in microwave.  Take mugs out and poke a caramel candy in the center of each mug cake and put into the microwave for an additional 40 seconds.  I poured some more caramel sauce on my cake since the candies did not melt well and garnished with raspberries. Eat it straight out of the mug or flip over onto a plate and serve.  Enjoy.

  1. Mmmm... caramel surprise! Love the idea Would make for a perfect midnight treat! :)

  2. This looks great! I am going to save this for a night I am pinched for time. I just want to grab that fork you have on the picture and devour the caramel left.

  3. oh wow....yummy yummy...Very Tempting!

  4. Mug cake looks fabulous and yummy.:)

  5. I, too, have seen these cakes...but my new microwave cooks so differently than my previous one, I figured I'd have a mess of something inedible on my hands :/ But I think my kids would think this was great I want to give these a shot when they're all here for the holidays. Topping with caramel sauce makes these even more appealing!

  6. 5 mug recipes at once. I cannot believe it. This looks delicious. I haven't made a chocolate cake one yet, nor have I made any in a very long time. I might be heading to the kitchen very soon.

  7. I've tried a microwave mug cake once and it was a complete failure. You inspired me to try again! The caramel surprise sounds too tempting :) Have a fabulous weekend, Ramona! xoxo

  8. Join the 2 minute club my friend, the idea of a caramel surprise blew me away :D

  9. I just had to go and open my mouth about microwave cake in a mug. This is so tempting and I know I will try it.

  10. I tried this once and is was disaster! Bobby and I neither one could eat it and had to throw it out. However, looking at your recipe and the one I remember using, there was A LOT more flour and it used cocoa powder instead of syrup. I think too much flour was what made it "tough". This recipe does look like a very moist cake and now I think I'm ready to try again after seeing this. Let me know when you improve about it. It's a great idea for this household because I can't have sweets laying around or I'll be eating on them all day. :)

  11. Aww man this looks great! Maybe i just picked a bad mug cake recipe then :/ I'll have to try again now that I've seen real success :)
