Ingredients:
1 box of yellow cake mix
1 1/2 cups of butterscotch chips
1 cup of baking coconut (sweetened)
2 eggs
1/2 cup of canola oil
Directions:
Mix the cake mix with the eggs and canola oil. Then add your chips and coconut. Mix all ingredients into the cookie batter well.
Make golf ball size balls from the cookie dough and place them on a sprayed cookie sheet. Place them in a 350 degree oven for 17-20 minutes. When the edges start to turn brown they are ready. Allow the baked cookies to remain on the cookie tray to cool completely and finish setting. Store cooled cookies in an air tight container.
Makes 15-18 cookies

These look delicious, I absolutely love desiccated coconut, must make something with it soon, perhaps these cake cookies. :) I have been blogging for two months now, have done about twenty posts, but have yet to do something sweet. Thank for the inspiration.
