Coconut Butterscotch Cake Cookies

 I have not posted a cookie or my "cake" cookies in a while.  I made these lovely little cookies when I got inspired yesterday after tasting some free samples of bakery cookies at my grocery store.  My kids loved the cookies and asked me to make my version at home.  I made these in minutes with a few basic ingredients and they came out just like the cookies my kids enjoyed at the store.

 Ingredients:
1 box of yellow cake mix
1 1/2 cups of butterscotch chips
1 cup of baking coconut (sweetened)
2 eggs
1/2 cup of canola oil

Directions:
 Mix the cake mix with the eggs and canola oil.  Then add your chips and coconut. Mix all ingredients into the cookie batter well.

Make golf ball size balls from the cookie dough and place them on a sprayed cookie sheet.  Place them in a 350 degree oven for 17-20 minutes.  When the edges start to turn brown they are ready.  Allow the baked cookies to remain on the cookie tray to cool completely and finish setting.  Store cooled cookies in an air tight container.

Makes 15-18 cookies
