Chilled Avocado and Cucumber Soup Shooter

Avocado Week
Welcome to day 5 of Avocado week here at Curry and Comfort.  Today is the last day of this totally fun week of playing around with avocados so I wanted to end with a party perfect soup shooter.  This soup comes together in minutes, then all you do is let the flavors develop in the fridge.  Finish off by pouring the soup into small glasses and serve a fun cold appetizer or starter for any summer meal.

 Ingredients:
1 large English cucumber 
1 large, ripe avocado, peeled
2 scallions (green and white parts included) chopped
2 cups chicken broth
3/4 cup sour cream
2 tablespoons lemon juice 
salt to taste (if needed)
1/2 teaspoon freshly ground pepper, or to taste
1 tsp cumin powder
1 clove garlic grated
1 jalapeno pepper seeded 

Garnish:
  chopped chives

 Directions:
 
 Prep all ingredients and place
in a blender.  Blend until smooth.

    1. That bottom banner is weird... I never placed a banner at the bottom of my blog. I saw it on my blog a few days ago and I could not close it either... but it's gone now. I hope the next time you check here.. it's gone for you too. :)
