Avocado Week |

Ingredients:
1 large English cucumber
1 large, ripe avocado, peeled
2 scallions (green and white parts included) chopped
2 cups chicken broth
3/4 cup sour cream
2 tablespoons lemon juice

1/2 teaspoon freshly ground pepper, or to taste
1 tsp cumin powder

1 clove garlic grated
1 jalapeno pepper seeded
Garnish:
chopped chives

Directions:


Prep all ingredients and place
in a blender. Blend until smooth.

Oh this chiled soup sounds like the perfect way to end summer! Cuz I'm all excited for autumn soups heehee. ;) LOVED this avocado week, Ramona! You showed me so many awesome ways to work them into recipes and meals.
