Taco Cupcakes with Avocado Cream Frosting

Welcome to day 2 of Avocado week here at Curry and Comfort.  I am also hosting a great giveaway from Good Cook to help you with your avocado needs.   Before I tell you about the giveaway, how fun and cute are these Taco cupcakes with Avocado Cream frosting?  I made taco cups when I first started my blog over two years ago, but I wanted to make cupcakes of them when I realized that avocados could make a fun and perfect "frosting".  My niece and nephew dropped by for the day and they loved these cool cupcakes.  My niece loved them so much, I had to promise her I would make them again for her birthday (over six months away).   I don't know if I can wait that long to make them again. We may have to celebrate her birthday earlier this year. :)

Ingredients:
1lb lean ground meat (beef, chicken, pork or turkey)
2 jalapenos seeded and chopped
1 onion chopped
2-3 Tbs store bought Taco seasoning (I used McCormick brand)
1-2 tsp of ground cumin
1 tsp of garlic powder
1 tsp of red chili flakes (or to taste)
Salt and Pepper to taste
1 (15oz) can diced tomatoes
1 tub of 8 grands biscuits
1 cup shredded cheddar or Mexican blend cheese


Avocado Frosting:
1 ripe avocado
1/2 cup cream cheese
1/3 cup sour cream
1 tsp lemon juice
1/4 tsp cumin powder
salt and black pepper to taste


Good Cook recommended tools:  Avocado Slicer
                                                      Citrus Reamer
                                                      Nonstick Muffin Pan, 6 Cup




Directions:
Start by browning meat with a little salt and pepper. Then add onions and jalapeno and finish browning meat.  Next add seasoning: taco seasoning, cumin, garlic powder, red chili flakes. Saute for 1-2 minutes.



Then add one can of diced tomatoes.  Saute for another 5-7 minutes.  Taste for seasoning.






Take biscuits and separate in the middle to form two thinner biscuits.  The biscuits are flaky and layered so this is easily done by simply pulling them apart. stretch a grands biscuit and gently mold it inside each muffin hole.  Now put some taco filling inside each cup and top with shredded cheese.   
Bake at 350 degrees for about 15 minutes or until biscuits are fully baked and the cheese is melted.  Should make 16 cups.

Allow Taco cups to cool down and then frost with avocado cream "frosting".  Serve immediately.  Enjoy.

  13. What a great idea! I will have to make them for the kids coming to dinner this week, they would love them! My son's girlfriend recently made a taco ring with crescent dough and with vegetarian crumbles, it was tasty so I know these will taste good and be oh so cute!! Love the avocado frosting!
