Creamy Spaghetti Dinner with Spinach and Sausage

2011: This is one of my family's favorite dinners. It's quick and easy with a little secret ingredient to make it rich and creamy.  I love adding the frozen spinach to the dish because it bumps up the nutrition factor and I can get my kids to eat a vegetable without even thinking about it. This is a one pot fantastic dinner that you can make in less than 30 minutes.

Ingredients:
1 box pasta cooked in salted water until al dente

Sauce: 
1lb Italian sausage casings removed
1 medium onion chopped
1/2 green bell pepper diced
1/2 lb frozen for fresh chopped spinach
2-3 cloves of garlic minced
1 large jar favorite pasta sauce
1 tsp dried oregano
1 tsp dried basil
salt and black pepper
red chili flakes to taste
1/2 cup water
brown sugar to taste for sweetness (if needed)
4oz brick of cream cheesed (that is softened)


Directions:
Brown Italian sausage. Then add chopped onion and minced garlic and saute.


 Next add green bell peppers and frozen spinach.



Season with dried oregano, dried basil, salt and pepper. 
Add one jar of your favorite pasta sauce. Also water into the jar and get all the sauce out of the bottle.



Optional seasoning,  add red chili flakes sprinkle (about 1 tsp)  of brown sugar. 
Finally add 4oz (half a package) of cream cheese. I used reduced fat cream cheese.


Mix and bring to a simmer. Taste the sauce for seasoning and salt.

Add cooked pasta (make sure you don't over cook the pasta because it will simmer in the sauce and keep cooking). I used whole grain spaghetti pasta here.  Serve hot.  Enjoy.  Serves 4-6 people.
