Jalapeno Pimento Mac and Cheese with Bacon

My family fell in love with my jalapeno pimento cheese after I made my stuffed burger last week.  So I made a big batch of it to make a fun and easy mac and cheese.  I knew I had a hit on my hands when my daughter asked for seconds.

Ingredients:

2-3 Tbs butter ( you can also substitute the bacon grease here)
2 Tbs all purpose flour
1 portion Jalapeno Pimento Cheese (recipe below)
1 box pasta cooked in salted water to al dente
bacon diced and cooked until crispy
1/2 cup starchy pasta water (from cooking pasta)
1 cup milk
 Jalapeno Pimento Cheese:
2 cups sharp cheddar cheese
1 cup mozzarella cheese
1/2 cup cream cheese
1tsp garlic powder
1/2 tsp black pepper
red chili flakes to taste
1/4 cup chopped jalapeno
1 small jar pimento peppers


Directions:
Cook pasta in salted water.  Drain shy of fully cooked.  Reserve 1/2 cup of pasta water before draining.  Heat pot with butter and add flour.  Cook for 1 minute on medium-high heat.  Add starch cooking water to pan.

Add entire jalapeno pimento cheese recipe given above. Stir well and add milk.





Add cooked pasta to cheese sauce and stir well.  Add cooked bacon that you drained on a paper towel. Cook for 3-4 minutes. Taste for salt and seasoning. Serve hot.  Garnish with more bacon and fresh sliced jalapenos.  Enjoy.
