Mango Peach Chutney over Stuffed Cream Cheese Appetizer

I am addicted to kitchen gadgets. I love to find double duty ways of using those kitchen gadgets to make new dishes in the kitchen.   I'm participating in the Stuffed Burger Competition sponsored by Good Cook and I was given the  Burger Stuffer to make my stuffed burger.  This burger press not only makes the perfect and easy stuffed burger, but it also makes perfectly shaped burger patties for non-stuffed burgers.  After doing a bunch of burger making with the burger stuffer I decided to find another fun recipe to make with my new kitchen toy.  I used it to make a stuffed cream cheese mold and I complimented it with a spicy and flavorful mango peach chutney.  What a fun appetizer to put out for a party.

PS..If you don't have time to make your own chutney you can also use jarred hot pepper jelly or mango chutney.

Ingredients:
Cream Cheese Mold
1 (8oz) brick  cream cheese
1 (4oz) brick cream cheese
1 Tbs diced green peppers
1 Tbs diced red peppers
2-3 Tbs sliced scallions

Mango-Peach Chutney
1 large ripe mango peeled and finely diced
1 large ripe peach peeled and finely diced
1 Tbs grated fresh ginger
red chili flakes to taste
2 Tbs rice wine vinegar
1 tsp curry powder
salt to taste
sugar to taste (if needed)

Directions:
Place all ingredients for chutney in pan on medium heat. Cook for 10-15 minutes. Stir occasionally.  Taste for salt and sweetness.  Allow to cool before proceeding.

Prepare chili and scallion stuffing for cream cheese.  Take cold cream cheese out of fridge and cover the burger mold with plastic wrap for easy removal.  Place half of the cold cream cheese into the bottom of mold.




Take burger press and make the indentation for the filling. Fill with peppers and scallions. Place 2nd half of cream cheese and cover the filling.
For easy removal, invert burger press on to serving plate.  Use the burger press to push the cream cheese mold out of the press down onto the plate.  Cover with prepared chutney. Serve with crackers. Enjoy.
