Buffalo Chicken Meatballs

Yum

 I'm still mad about meatballs here at Curry and Comfort.  These Buffalo Chicken Meatballs taste like a chicken wing without all the mess of eating it off the bone.   My kids adore Frank's Red Hot Sauce so it was easy enough to just toss these in a simple hot sauce.  Just add some toothpicks and watch all the smiling faces.


 Ingredients:
2lbs of lean ground chicken
1 egg
1 small handful of minced parsley
1 tsp paprika
1 tsp dried oregano
1 tsp dried basil
1 tsp granulated garlic (or 2-3 cloves grated)
1/4 cup Parmesan cheese
3 slices of bread soaked in about 1/4 cup of milk*
Salt and Pepper to taste

Sauce:
1 cup wing sauce (I used Frank's Red Hot Sauce)
1/4 ketchup
2 Tbs butter

 Directions:

Mix well and form into meatballs.  Do not overwork the meatballs when you shape them so they stay tender. Make meatballs to your desired size. If you are making these for an appetizer, the size of a walnut is good.  Fry the meatballs (in small batches on medium heat in 2 Tbs of canola oil until cooked.

Toss with your favorite hot sauce, ketchup and butter on a gentle heat until glazed and well coated.  Serve hot. Enjoy.
