Beef Fajitas

I remember the first time I had fajitas in a Tex-Mex restaurant... I fell in love with the smell as they brought all the sizzling meat and vegetables on a cast iron skillet to the table.  I think I did pretty good job capturing those aromas in my kitchen when I made this homemade version of fajitas for my family.  The kids loved how they could customize their own fajitas with the fixings that I provided.  My daughter is not a big meat eater, so she loaded up on the peppers and onions that my son so happily gave up to make a vegetarian version for herself.  Who needs to spend all that money going to a restaurant when you can make this easy meal right at home.



Beef Fajitas

Ingredients
    To Make Beef Fajita Filling
    • 1lb beef (I used flank steak)
    • 2-3 Tbs of fajitas seasoning (see recipe below)
    • 1 large green bell pepper sliced
    • 1 medium red bell pepper sliced
    • 1 medium yellow or orange bell pepper sliced
    • 1 large onion sliced
    • lime juice to taste (1-2 tsp)
    To Make Fajitas
    • Flour tortillas (heated)
    • shredded cheese
    • sour cream
    • shredded lettuce
    • diced tomatoes
    • salsa
    • lime wedges
    For Spicy Fajita Seasoning
    • 2 Tbs chili powder (used for chili con carne)
    • 1 Tbs cornstarch
    • 1 Tbs paprika
    • 2 tsp cumin powder
    • 1 tsp red chili powder (or cayenne powder)
    • 1 tsp garlic powder
    • 1 tsp black pepper
    • 1 tsp salt
    • 1 tsp onion powder
    • 1/4 tsp sugar
    Instructions
    1.  Rub 2Tbs of fajita seasoning onto meat. Allow to sit for 30 minutes to allow seasoning to absorb and meat to come to room temperature.

    2.  Heat pan with 2Tbs oil on medium high heat. Cook 5-6 minutes each side (more if you like well done). Remove steak from pan and allow to sit for 15 minutes before slicing against the grain.

    3.  Slice onions and peppers. In the skillet that you cooked the beef, add the onions and pepper and saute on medium heat until they start to become tender. Sprinkle with a little more fajita seasoning, salt and black pepper to season the veggies.
    4.  Add the sliced beef and any juices from the meat into the pan. Squeeze some lime juice and taste for seasoning.

    5.  Serve with warm tortillas, shredded cheese, shredded lettuce, sour cream, diced tomatoes etc... Enjoy.
