Parmesan Crusted Chicken

Yum

I had to share this recipe that I saw on the Rachael Ray Show.  She had a guest cook (actress, Kirstie Alley) come on and make a  Parmesan Crusted Chicken that was perfectly low-carb.  I knew I had to try it out from the sound of it.  I love garlic so I decided to add a few more ingredients to make the sour cream coating garlicky and delicious.   We at this with some great roasted vegetables and salad.  It was such a wonderful low carb meal that even the non-low carb eaters wanted seconds. 


Ingredients:
5-6 boneless skinless chicken breast
3/4 cup sour cream
1/2 cup Parmesan Cheese
1/2 tsp granulated garlic
1/2 tsp dried basil
1 tsp dried parsley
salt and pepper to taste



  • 1/4 cup low-fat, grated, organic, dry parmesan cheese
  • 4 organic boneless, small, thin chicken breasts (3 ounces each) 
  • Salt and pepper, to taste
  • 1/2 cup organic sour cream

    Directions:

  • 1/4 cup low-fat, grated, organic, dry parmesan cheese
  • 4 organic boneless, small, thin chicken breasts (3 ounces each) 
  • Salt and pepper, to taste

     Mix the sour cream with the basil, parsley and garlic and set aside. Then lightly season chicken with some salt and black pepper (more pepper than salt because the Parmesan cheese will also have a salt flavor.

     Coat each piece of chicken with the sour cream mixture on both sides.  Then dip into Parmesan cheese and coat on both sides.  Place on a baking sheet that is sprayed with cooking spray.  Then bake in a 425 degree oven for 30-35 minutes or until cooked through and cheese has browned.  Serve hot or cold.  Enjoy with roasted vegetables or salad.
