My husband and my son are meat eaters. My daughter and I are too, but we could go without eating meat for every meal... they can't. I made this Stroganoff to appease the meat eaters in my family. But before I start, I have two confessions with this recipe.
1. I don't like to cut meat if I don't have too (hence the use of ground).
2. This really isn't ground beef (it's chicken!) since I don't eat beef. Okay... sorry for the misleading title, but you can certainly make this ground beef if you like. Heck you can even make it with soy crumbles. You can use what ever you like, the sauce is still the same. I titled it ground beef because Stroganoff usually is beef... but you know I'm a rebel. We ate it over rice and it was a creamy and delicious meal. I got my son to eat green peppers, mushrooms and onions... it's also a win with the battle of the picky eater for me. :)
Ingredients:
1lb ground beef (chicken, turkey etc..)
1 medium onion chopped
1 medium green bell pepper diced
2 cups of sliced button mushrooms
2 cloves of garlic grated
1-2 tsp Worcestershire sauce
1 (10.5oz) can condense Mushroom Soup
1 can (10.5oz) water (use soup can to measure)
1/2 cup sour cream (more for garnish)
1-2 Tbs of white wine or dry sherry (optional)
1 tsp dried poultry seasoning
1/2 tsp dried oregano
1/2 tsp dried basil
2 Tbs flour
Seasoning Salt (to taste)
Red chili flakes (to taste)
Black Pepper (to taste)
Directions:

Heat 1-2 Tbs of canola oil in large pan. Once heated add ground meat and brown. Then add sliced mushrooms, onions, diced bell peppers and salt and black pepper. Once mushrooms brown add poultry seasoning, dried basil and oregano, flour and red chili flakes. Saute for 1 minute.

Next wine or sherry, condensed mushroom soup and can of water. Simmer for 10-15 minutes. Taste for seasoning and turn stove off. Finish with 1/2 cup of sour cream. Stir well. Serve over egg noodles or rice. Garnish with more sour cream. Enjoy.

I can go without meat for a few days if I have to or even with my choice, but I cannot be vegetarian because I seriously love some meat dishes (all kinds of BBQs... yum). Nice "Beef" stroganoff! ;) I like that you still enjoy this dish with chicken, and ground meat. We always adapt to our liking. :)
