2 Minute Chocolate Mug Cake with Caramel Surprise

I have seen microwave chocolate cakes around for a while.  I always thought they were so cool, but I never tried to make one myself. Then one day I was watching Rachael Ray when Sunny Anderson from the Food Network came on and did 5 mug style desserts in the microwave in 10 minutes.  I had all the ingredients for this Chocolate Cake in my house so I did it that day.  The cake was pretty good and really moist.  I only had Nesquik Chocolate Syrup in the house so that's what I used and it was not my favorite chocolate flavor for the cake.  The caramel would have been cool, but it didn't melt in the 40 extra seconds I put it in for... I blame my microwave.  But all it in all the concept and results were pretty darn good!   This recipe has sparked a new passion for me.  I am going to start playing around more with this concept of mug cakes and see what I can come up with too. :)


Ingredients:
Cooking spray
1 egg
4 tablespoons chocolate syrup
2 teaspoons flour
1/8 teaspoon cinnamon
A pinch of salt
2 caramel candies
1 1/2 tablespoons sugar

My addition:  caramel Syrup
Garnishments: raspberries

Directions:
Spray both microwave safe mugs with cooking spray.  Then beat egg and mix all ingredients (except for the caramel candies) to form a batter. Pour batter into sprayed mugs. Cook on high for 2 minutes in microwave.  Take mugs out and poke a caramel candy in the center of each mug cake and put into the microwave for an additional 40 seconds.  I poured some more caramel sauce on my cake since the candies did not melt well and garnished with raspberries. Eat it straight out of the mug or flip over onto a plate and serve.  Enjoy.
