2 Minute Microwave Mug Omelet

When you are a busy mother of two young kids, getting out the door in the morning with a good nutritious breakfast in your belly can be tough.  I was ecstatic about this easy and delicious 2 Minute Microwave Mug Omelet.  No frying pan necessary.  I saw this idea in a magazine advertising eggs and the concept was so intriguing. I knew I had to give it a try with my own recipe.  When I pulled the mug out of the microwave I seriously did a happy dance.  This omelet was light, fluffy and so very easy.  I only had one small bowl and my coffee mug to wash after it was done so that was good too.  You can customize this omelet with any add-ins.  I suggest if you want to do this for several days in a row, have all your add-in ingredients prepped and ready to go in a partitioned Tupperware or Ziploc bags and just toss into the omelet as you wish.  Everyone has two minutes to spare for a healthy breakfast and this one is perfect.



Ingredients for One Mug Omelet:
1 large egg
2 Tbs milk
salt and black pepper to taste
cooking spray

Add-ins:
raw onions diced
green peppers ( I used defrosted frozen diced green bell peppers)
finely diced jalapeno
shredded cheese (cheddar, etc..)
crumbled cooked sausage
diced cooked ham
cooked crumbled bacon



Directions:
In a bowl beat one egg, a splash of milk, salt and pepper well.  Then add the add-ins of your choice and mix well.  Spray a microwave safe mug with cooking spray then pour in the omelet mixture.  Top with some extra shredded cheese and put in the microwave for 2-3 minutes (depending on your microwave wattage).  I put it in for 21/2 minutes.  Serve hot. Enjoy.
