This pizza is so simple, but full of flavor and beautiful colors. I made it for a quick and easy lunch and everyone loved it. I decided to not to put a sauce on this pizza crust, instead I put a garlic bread twist on it. To punch up the flavor some more, I tossed the tomatoes in vinaigrette and drizzled the same vinaigrette on the pizza before serving. I may not be going to Italy this summer... but this pizza was as my passport to Italy and it reminds me of the Italian flag too.
Ingredients:
Store-bought Naan Bread (as needed)
Fresh mozzarella cheese cut into slices (as needed)
Fresh basil leaves thinly shredded (as needed)
Sliced grape or cherry tomatoes (tossed with vinaigrette below)
2 Tbs butter melted with 1/4 tsp granulated garlic
Vinaigrette:
2 Tbs olive oil
salt to taste
1/2 tsp dried oregano
black pepper to taste
red chili flakes to taste
1/2 tsp up to 1 tsp balsamic vinegar
Directions:
Slice tomatoes and toss with prepared vinaigrette above. Prepare the butter/garlic spread and brush generously on naan bread. Layer naan with sliced mozzarella cheese then top with marinated tomatoes and bake until cheese melts and bread is toasted. Remove from oven and top with some shredded basil leaves and drizzle with some remaining vinaigrette.

Very colorful & yum looking...
ReplyDeleteYou're tugging at my heart with one of my all time favorite pizzas. When we were in Italy it was all I ordered. I love how easy it is to pull together too.
ReplyDeleteOh this looks fabulous Ramona! Funny that I buy Naan nearly every week at the market, yet I've never thought to use it as a crust for pizza before! Now it seems that the possibilities are endless! Though nothing beats Margherita pizza....and especially with your home grown tomatoes! What a perfect summertime supper! : )
ReplyDeleteSometimes I just need pizza. The best way to nix those cravings is with an easy recipe like this. Love in the summer that I fresh basil right outside.
ReplyDeleteMade a margherite pizza last summer with 4 different heirloom tomatoes - dwarf baby green, yellow Yeager, a pink beefsteak, and a black tomato - then topped with fresh mozzarella, basil. spread the thin crust with some olive oil and garlic. since my family doesn't like tomatoes, I ate it all myself. Waiting for some heirlooms to make Gazpacho this summer too.
ReplyDeletePizza on naan is a brilliant idea, you are so creative my friend! It looks super summery and delicious :)
ReplyDeleteCheers

ReplyDeleteThese naan pizzas are fabulous, Ramona! Pizza Margherita is one of my family's favorites, and now that I got my mom hooked on naan she would FLIP for this! :D

Naan as a pizza crust works for me. Hard to believe I've never had Margherita pizza before.
ReplyDeleteNaan bread definitely makes for great pizza base. We always end up doing that with out left over naans! Love the margherita version :-)
