When I was a kid, I could eat an entire can of pork and beans as a meal. I loved beans on buttered toast, beans warm, hot or even cold. I decided to make some fancier beans by doubling the pork in this dish. There is bacon as well as ground pork so these are even porkier! I made some cornbread to go with this meal and a salad and we called it lunch. This is a great dish for a bbq or even for breakfast. Yes... I am definitely eating this for breakfast tomorrow over some hot buttered toast. YUM!

5-6 slices bacon
1lb lean ground pork
4 (16oz) cans of Pork and Beans
2 tsp ground cumin
1 tsp chili con carne powder
2 cloves garlic minced or grated
1 red onion diced
1 bell pepper diced
1-2 jalapeno or green chilies diced
salt an black pepper to taste
red chili powder (cayenne) to taste
Directions:
Saute bacon until crispy. Remove bacon from pan and discard all bacon drippings except for 2Tbs. Saute ground pork, diced peppers and garlic and onions in remaining bacon drippings. Season with

I had never thought to eat beans on toast for breakfast, but it sounds delicious! Beans are some of my favorite foods and, like you, I have eaten them warm and cold--wonderful!
