Watermelon Lemonade

Hot weather requires a lot of refreshing and cooling beverages.  Watermelons and lemons are the perfect flavors for summer time drinks.  If it's scorching out, just mix a batch of this Watermelon Lemonade and you can sit back and cool off. 

The kids had a great time making this drink with me and when they finished juicing and mixing it all up they drank it with happy smiles. Now that's what I call making some great summer time memories. :)



Ingredients:
5-6 cups cut watermelon chunks (no rind)
1 cup lemon juice
water as needed-(about 3-4 cups)
simple syrup from recipe below as needed to sweeten
ice as needed
optional ingredients:  mint

Simple syrup:
1 cup sugar
1 cup water
Heat both ingredients and bring to a boil.  Stir until sugar is dissolved. 


Directions:
 
 Blend watermelon until smooth. Strain all pulp out of watermelon.  Mix watermelon juice with lemon juice, water and simple syrup. Adjust to taste.  Serve with ice.  Enjoy.
