Grapefruit Salad

It may be freezing outside and there may be snow in the forecast, but this dish is full of sunshine.  I love a juicy and tart grapefruit.  I usually just eat them like a meal, but this time I decided to get crazy and make a salad with it.  

I ate a whole bunch of salad in one go because it was so enjoyable.  It had a really nice balance of sweet/sour and spice that I love.  I felt like the sun was shining from my belly after eating a big bowl of this salad.  Now I think that I can even handle a bit more snow. 





Ingredients:
2-3 large grapefruit segments
1 orange segments
2-3 sweet peppers finely diced
half a red onion finely diced
1-2 jalapeno peppers finely diced
1 cup fresh grapefruit juice
1 Tbs rice vinegar
1 tsp brown sugar
salt and black pepper to taste



Directions:
1. Supreme grapefruit and orange over bowl.  Use bowl to catch all the juice from the grapefruits and orange.   To follow directions on how to Supreme a Citrus click HERE.
2.  Prepare dressing with the juice from the supremed citrus and the other ingredients listed
3.  Place grapefruit and orange segments in a bowl (or over lettuce as shown) and pour dressing with peppers and onion over salad. 
4.  Serve immediately or chill before serving. Enjoy.
