Grapefruit Salad

It may be freezing outside and there may be snow in the forecast, but this dish is full of sunshine.  I love a juicy and tart grapefruit.  I usually just eat them like a meal, but this time I decided to get crazy and make a salad with it.  

I ate a whole bunch of salad in one go because it was so enjoyable.  It had a really nice balance of sweet/sour and spice that I love.  I felt like the sun was shining from my belly after eating a big bowl of this salad.  Now I think that I can even handle a bit more snow. 





Ingredients:
2-3 large grapefruit segments
1 orange segments
2-3 sweet peppers finely diced
half a red onion finely diced
1-2 jalapeno peppers finely diced
1 cup fresh grapefruit juice
1 Tbs rice vinegar
1 tsp brown sugar
salt and black pepper to taste



Directions:
1. Supreme grapefruit and orange over bowl.  Use bowl to catch all the juice from the grapefruits and orange.   To follow directions on how to Supreme a Citrus click HERE.
2.  Prepare dressing with the juice from the supremed citrus and the other ingredients listed
3.  Place grapefruit and orange segments in a bowl (or over lettuce as shown) and pour dressing with peppers and onion over salad. 
4.  Serve immediately or chill before serving. Enjoy.

  1. Pretty salad, Ramona. Reminds me of the time I was pregnant many moons ago...I craved pink grapefruit and ate them by the bagfuls...turns out they are high in folic acid...essential for the baby and helps prevent spina bifida.

  3. I've never been a fan of grapefruit - but seeing this salad - I think I will change my mind! This sounds delicious!
