Watergate Salad

 Watergate Salad or as I call it "I am not a crook" Watergate Salad was created in the 1970's by the Kraft Company.  It is a light and sweet tasting salad that is made with pistachio pudding, marshmallows, crushed pineapple and whipped cream.   Watergate is the name given to the political scandal in the United States in the 1970s, which led to the resignation of President Nixon.  Although the name Watergate Salad was not coined by the Kraft Company, the name stuck out of popularity and it is still enjoyed today at many potlucks and parties. I recently made this for my 1970's Disco themed party and we all enjoyed it very much.


Ingredients from the original Kraft Recipe:

1 can (20 oz.) crushed pineapple with juice
1 pkg.  (3.4 oz.) JELL-O Pistachio Flavor Instant Pudding
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup  chopped PLANTERS Pecans
1-1/2 cups thawed COOL WHIP Whipped Topping



Directions:
Combine the crushed pineapple with juice and the pistachio jell-o pudding  together until pudding is mixed in well.  Then add the marshmallows, pecans and cool whip topping and combine well.   Refrigerate for 1-2 hours before serving. Served chilled. Enjoy.
