I adore lemons so I always buy a big bag of them when I go to Costco. Then I come home and scratch my head about what to do with them all. So, what do you do when you have too many lemons? Bake some Lemon Bars. :) I found this very easy recipe on Kraft.com for Lemon Bars. My family really enjoyed them and I could not asked for a better use of my lemons.
Ingredients:
For Crust:
20 wafer cookies crushed
1/2 cup flour
1/4 cup packed brown sugar
1/4 cup cold margarine
Filling:
1 (8oz) package cream cheese
1 cup granulated sugar
2 eggs
2 Tbs flour
2 Tbs lemon zest
1/4 cup fresh lemon juice
1/4tsp baking powder
Garnish
1-2 Tbs powdered sugar
1 Tbs lemon zest

Directions:
For easy
mixing, place cookies, brown sugar and flour into food processor. Blend
until sand like consistency. Then add cold margarine (cut into pieces) and plus food
processor until it forms a crumbled consistency.
Either spray or line 8-inch square pan with foil. Press crust ingredients into
prepared baking dish and press down into a well packed even layer. Bake
for 15 minutes in 350 degree oven.
To prepare the filling place the granulated sugar and cream cheese
into food processor and blend until well combined and smooth. Then add
eggs, flour, lemon zest, lemon juice and baking powder. Blend until
smooth. Pour filling over pre-baked crust. Then bake in oven for 25 to 28 min. or until center is set. Cool
completely. Refrigerate 2 hours. Sprinkle with powdered sugar and
remaining zest before serving. Enjoy.

ReplyDeleteI've made lemon bars once before and I'm not sure if I baked it wrong or got the recipe all mixed up...it din't taste so good to me. And I've never really tasted a good lemon bar before, so I'll never know if what I made was the real deal :-)

I love lemon desserts, too! I actually just bought a new cookbook of all lemon desserts! While I like lemon bars...I really love these which have cream cheese added to them. And I can't wait to try these! (LOVE your cake stand!)
