Apple Cake with Caramel Glaze plus bonus Muffins (Apple Week Day 3)

Since this is apple week, I knew I had to share an apple cake or muffin with everyone.  Well, I accidentally made too much batter for my cake that I had enough for some bonus muffins too.  You can add any nut you choose for this cake and if you want to make it a little less rich, add applesauce for the oil below.  I was planning on doing just that, but did not have the applesauce on hand.   The cake is not overly sweet so it compliments the very sweet and rich caramel glaze.


Ingredients:

Wet Ingredients:
1 1/2 cups sour cream
1/2 cup canola oil (can substitute applesauce here)
3 eggs
2 tsp vanilla
1 cup brown sugar
1/2 cup white sugar
1 cup milk
2 tsp cinnamon powder
1/4 tsp freshly grated nutmeg
2 cups chopped peeled apples
1 cup chopped nuts (almonds, walnuts or pecans)
 
Dry Ingredients:
3 cups All Purpose Flour
1/2 tsp salt
3 tsp baking powder
1 tsp baking soda

Caramel Sauce:
1/3 cup caramel sauce (store bought  or you can use a homemade recipe)
2 cups powdered sugar


Directions:
Peel and chop apples. Mix all wet ingredients together.

Sift dry ingredients into wet ingredients.  Pour batter into well greased bundt pan a little more than half way up the sides.



Bake for 45-55 minutes until done in a 350 degree oven.

For muffins: bake at 350 degrees for 22-25 minutes. Allow cake or muffins to cool.  Mix caramel sauce and powdered sugar and pour over cake.  Enjoy.

  6. I always feel like muffins are a good thing for me. I don't take more than two muffins at a time. The cake however I am likely to eat the whole thing at once. Especially when it looks as good as this one.

    1. It made about six muffins when you fill the bundt pan with batter. Now if you want to make all muffins (I'm guessing here)... maybe about 14-18 muffins can be made.
