In September 2012 I wrote: I love the flavors of apples and cinnamon together so I made this fruit and maple syrup topping for our breakfast pancakes. It's like eating apple pie for breakfast so how can you resist? I heard a resounding request for seconds on this one from the breakfast table. I love when that happens. :)
Ingredients:
5-6 golden delicious apples (peeled, cored and sliced)
3 Tbs butter
1-2 tsp ground cinnamon (to taste)
1/2 to 1 tsp ground ginger (to taste)
pinch of salt
1 cup maple syrup
Directions:

Peel, core and slice apples. Add to a skillet with butter and salt. Saute for 3-4 minutes. Next add cinnamon, ginger and maple syrup. Lower heat to medium-low and simmer on stove for 5 minutes. Cook apples to your desired tenderness. Serve warm over fluffy pancakes. Enjoy.
