Breakfast Fried Rice

 I love a savory breakfast.  Forget about pancakes, doughnuts, waffles and danishes...this girl will take rice over them any day.  Of course this Breakfast Fried Rice is just as good at lunch or dinner.  What makes this fried rice so good for breakfast,? Well there is bacon, chorizo sausage and an egg to top it off.  Of course it also has the fabulous flavors of fried rice as well, plus a bunch of healthy spinach for good measure.  What ever time of the day you decide to enjoy this meal... the fact is you will enjoy it. 


Ingredients:
6-8 strips of bacon fried crispy and chopped into bite-size pieces
1lb Mexican style chorizo sausage (you can substitute your favorite good quality breakfast sausage)
8oz fresh spinach leaves
1 medium onion chopped
1 bell pepper (any color) chopped
1 Tbs fresh ginger grated
2 cloves fresh garlic grated
red chili flakes to taste
2 Tbs oyster sauce
1 tsp sesame oil
3-5 Tbs soy sauce (or to taste)
6-8 cups cold cooked rice (leftover rice is best)
1 fried egg per person

Directions:
First brown bacon, drain on a paper towel and chop.  Then brown chorizo really well and drain oil.  Add 2 Tbs canola oil to saute onion, garlic ginger, bell peppers and red chili flakes with bacon and sausage.

Then add fresh spinach and allow to start wilting. Add soy sauce, oyster sauce and sesame oil.  Finally add cooked rice and toss well with all ingredients.  Fry an egg any style and serve on top of rice. Enjoy.
