Mardi Gras Dirty Rice with Red Beans

** Today I am posting  a recipe from 2011 that I did in the early days of my blog.  My photos were not the best those days so I took some new photos to share. 

In 2011 I wrote: Today is Mardi Gras also known as  "Fat Tuesday".  It's a day to eat some rich and fatty foods before the ritual fasting of the Lenten season, which begins on Ash Wednesday.  You can eat this Mardi Gras Dirty Rice and Bean as a side dish or as a main dish.   This is a great dish to use up leftover rice.  If you do not have leftover rice, then make the rice in advance and allow to cool before starting the cooking process.  You may want to make it Fat Tuesday once a week after eating this rice dish.


Ingredients:
1lb hot sausage
1/2 lean ground beef 
1 can drained and rinsed red kidney beans
1 large bell pepper diced
1 Tbs minced (or grated) fresh garlic
1 large onion diced
2-3 celery stalks diced
1 tsp dried thyme
2 tsp paprika
black pepper and salt to taste
red chili flakes to taste
1 (15oz) diced tomatoes
1 Tbs Worcestershire sauce
Several dashes hot sauce (to taste)
2 Tbs fresh parsley minced
5-6 cups cooked cool/cold rice

Directions: 

Brown ground beef and sausage until it has a nice dark brown color.  If you have more than 2 Tbs of rendered fat from browning meat, remove excess.  Next add the garlic, bell pepper, onion and celery and saute.

Once the veggies cooked down, add red chili flakes, paprika, thyme, salt, black pepper, Worcestershire sauce, hot sauce, diced and tomatoes.  Finally add the beans and toss with the meat mixture.  Finish off with the cooked rice rice and parsley.
Serves 4-6 people.  Enjoy.
