My son absolutely adores pasta and sausage. I wanted to add a little bit of greenery to it to make it extra yummy and healthy. Kale is always in my fridge since I use it in so many dishes so it was easy to decide what to add to this pasta dish. He loved it and requested the leftovers for his lunch the next day. He's so funny because every time I make a pasta dish it becomes his new favorite pasta. Then I


Ingredients:
1 box fettuccine, linguine or spaghetti pasta cooked to al dente in well salted water
1lb Italian sausage (crumbled without casing)
2 cups of shredded kale (no stems)
1 medium onion chopped
1/8 tsp grated nutmeg
2 cloves garlic grated
red chili flakes to taste
1/4 cup chicken stock (or water and chicken bullion)
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 cup grated Parmesan cheese
salt and black pepper to taste
Note: Save 1 cup of starchy pasta water if needed.
