Fully Loaded Tuna Salad

My husband makes his Tuna Salad with just a dollop of mayonnaise, some salt and pepper.  Although that is fine, I like mine a little more interesting with lots of other flavors going on.  So this is my version of a Tuna Salad with the "works".   I actually used this recipe to make Tuna Melts for my kids recently.  I loved it so much that I ate it in a sandwich and I thought it would make a great spread for crackers or even a as a wonderful topping to a green salad.  My house is always stocked with canned tuna for a quick meal.  Although this technically is a quick meal, it doesn't taste like one.


Ingredients:
Tuna Fish Spread:
3 cans of drained light tuna fish
1/3 cup light mayonnaise (or to taste)
1 Tbs dijon mustard
2-3 Tbs finely diced celery
2-3 Tbs finely diced green bell pepper
2-3 Tbs finely diced red onion
2-3 Tbs finely diced green onion (green part only)
1 Tbs of drained capers
1 Tbs of pickle relish (optional)
1 serrano or jalapeno pepper partially seeded
black pepper ( to taste)
salt (if needed).  I did not use any since the tuna and the capers provided salt.

Directions:
Finely chop (either by hand or in food processor) the onion, celery, bell pepper, capers, green onions and green chili.  Mix with the drained tuna fish, mayonnaise, Dijon mustard and black pepper.  Taste for flavor.  Eat with bread, crackers or in a green salad. Enjoy.
