Quick Sausage Fried Rice

 I had a busy day yesterday. I had to take both my kids for haircuts before school started and run a bunch of errands (in this stifling heat) which is not fun.  So I decided to get lunch ready and into the fridge so all I had to do was simply heat it up when I got home with two hungry and hot kids.  I quickly made this fried rice with ingredients I had in my fridge while my kids ate breakfast.  Fried rice is always a standby in our house because it's so forgiving. You can throw any meat (cooked or raw) and veggies (fresh or frozen) into the fried rice to make a quick meal.  I had some Hot Italian Sausages that I wanted to use up so that was the meat chose for this version. You can easily leave out the meat and just add eggs and it will be fine for a vegetarian version. I also use a frozen bag of mixed vegetables so there was no need to chop too much stuff.  I was so thankful I made this before I left, we had a healthy and satisfying meal ready in minutes when we got home and leftovers for another meal too.



Ingredients:
7 cups cooked rice (cool or cold rice is best).  I used brown basmati rice.
1/3 cup soy sauce (or to taste)
1 Tbs of grated garlic
1lb of hot Italian sausage (or any lean ground meat)
1 bunch of green onions sliced (whites and greens separated)
1 medium onion finely diced
1lb bag of frozen vegetable mix(peas, carrots,beans, corn and lima beans)
6 eggs
2 Tbs butter (or a more as needed)
red chili flakes (to taste)



Directions:
Heat a large wok or frying pan with butter and add eggs. Scramble in the pan and once eggs set, remove from pan and set aside until later.

Add sausage or ground meat next into pan.  I did not add any oil since the sausage gave off about 1 Tbs of oil.  If your sausage or meat gives off more oil, drain once meat is brown. If it does not give enough oil, add 1-2 Tbs of butter. Next add garlic, onions and whites of green onions.

 Then add red chili flakes and soy sauce and cook for 1 minutes. Now add the frozen vegetables and cook for 2-3 minutes.

Add the cooked cold rice into the pan and toss with all the ingredients.  Taste and add soy sauce as needed.  Add cooked eggs back into pan and gently toss with rice.

 Serve hot.  Garnish with green of green onions. enjoy.

  1. This looks fabulous! We love fried rice in this house! It's such a must when making rice to automatically make extra so we can have fried rice! I'm absolutely going to try your version!

  2. Great idea to have lunch waiting for when you get home. Faster than "fast food" and so much better for you. This rice sounds yummy, never tried it with sausage but I bet it tastes great!

  3. OMG I swear you inspire me with these posts. Fried rice is one of my favorite take-out dishes and I always want to make it but always feel like it will be too involved. But it looks so yummy I'll have to try it as a quick lunch at college for sure. :D I always have breakfast sausages in the freezer and I bet I could cut them up and use them in here and no one would be the wiser ;)

  6. I know what you mean about planning to have dinner ready, just needing to be reheated when you have hot and tired kids to deal with. I love this version of fried rice! I bet the sausage was a nice twist!

  9. What a quick and easy dinner! Great idea using the bag of mixed vegetables! Saves a lot of time for you busy moms! I would definitely use the hot Italian sausage since it's one of my favorites and would add that needed spice that we have come to love! :) Have a great week my friend!
