Wasabi Blue Potato Salad

 I love a good potato salad, but I can be a bit picky when I eat them as well.  If the potatoes are slightly under done then it can ruin it for me.  I like a creamy potato that still can retain it's shape.  I certainly achieved that with these wonderful little blue potatoes.  It's actually the first time I used this kind of potato and not only are the fun to look at, you don't have to peel them.   I decided to jazz this potato salad with the flavors of wasabi and it was a nice little kick.  My daughter ate this potato salad like a main dish and not the side dish.  Of course you can use any potato you wish for this salad and mix it with the wasabi sauce, but if you if find blue potatoes definitely give them a try. :)



Ingredients:
2-3lbs of blue potatoes cut into a large dice and boiled
1/2 up to 1 cup of light mayonnaise
1-2 tsp of wasabi paste or sauce (to taste)
1 Tbs of apple cider vinegar
1 Tbs white sugar
salt and black pepper to taste
1/2 tsp of celery seeds
1/4 - 1/2 cup of red onion finely diced
1/4 cup of diced celery
1/4 cup of sliced green onion

Note: My favorite ingredient in potato salad is celery seed. So I really suggest you make sure you use it unless you dislike celery seeds of course.

 
Directions:
Boiled cup potatoes in water with salt until fork tender.  Then add all the other ingredients to the dish and toss well.  Serve immediately or chill in fridge.  Enjoy.

Note:  Adjust the flavors of this potato salad to your own taste.  If you like more of a tangy salad add more vinegar or sugar for a sweeter salad.    Definitely adjust the amount of wasabi to your taste.
