Slow Cooker Pork Carnita Tacos (Twice as Nice Tuesdays)

I'm continuing with Slow Cooker/Crock-pot week and I bring you a family favorite, Slow Cooker Pork Carnitas.
 
 Twice as Nice Tuesdays is a new feature I would like to introduce here at the blog.  I was looking through my blog recently and realized that I have a lot of recipes that should get a 2nd look and showcase them again.  So today I am looking back at a dish I made over a year ago... 

March 2013 I wrote:  I think tacos make a great family friendly meal.  My kids love to play an active role in what they fix for themselves to eat.  When I make tacos I always put out plenty of fixings so they can customize their tacos to exactly what they love and keep out those pesky things they don't like so much.  My son steers clear of the diced tomatoes and onions, but daughter wants it loaded just like me and my hubby.  Anyway you fill your taco, this slow cooker pork is amazing in them.  The meat totally melts with every bite. I recommend taking the extra step in browning your meat, it really gives the pork extra flavor.  These pork carnitas are an easy-peasy meal that cooks in the slow cooker as you put your feet up and read a book. :)




 Ingredients:
Ingredients for slow cooker:
4lb roasting pork like pork shoulder or pork butt
2 bay leaves
1-2 adobe chilies with some of the juice from the can
3-4 cloves garlic
1/4 cup jalapeno juice
1/4 cup sliced jalapeno
1 medium onion sliced
1 tsp dried oregano
1 Tbs ground cumin
1/2 cup chicken stock (or water and bullion)
salt and black pepper
1 14oz can diced tomatoes

Fixings for Tacos:
Heated tortillas or hard shell tacos
sour cream
cheese
tomatoes
onions
limes 
 

Directions:
Brown all sides of pork roast with some salt and pepper in a large pan with 1 Tbs of oil. Place in slow cooker with all the slow cooker ingredients.  Cook on high for 4 hours or low for 8 hours.  Take out of slow cooker and shred.  Pour some of the liquid over shredded pork (you may have additional liquid left in slow cooker you can serve as extra sauce on the side or discard).

Serve with tacos and fixings as part of a meal.

  2. I don't eat pork,but these Taco's looks very tasty,I start to use slow cooker more often now if i have long hours schedulle @ work :)

  4. I love the presentation. It is great you let your kids have all the choices. You never know when your son might try the tomatoes again. I hated them as a kid and now I love them!

  7. Isn't it amazing what deliciousness can come out of a slow cooker?? Ramona these look like fantastic tacos to enjoy any night of the week. Pork carnitas is one of my favorite meats to do in my crock pot and I love this version :D

  12. This pork carnitas looks delicious - tender and tasty! I love topping my carnitas with red chile sauce and eating with a flour tortilla, but then that's no surprise, I'm sure. :) Great recipe!
